Flavor Profile

Single & Wild Colon-Elle is a unique, unfiltered blend of spontaneously fermented lambics with refermentation in the bottle. About 90% of the blend has matured for 18 months in barrels from brewery Het Anker in Mechelen (they were previously used by Gouden Carolus to age Single Malt whiskey). The result is a golden beer with an ABV of no less than 8% vol. Offering fine whiskey notes while maintaining its typical, vibrant lambic character.

Producer: Lambiek Fabriek

Lambiek Fabriek was founded in 2016 by Jo Panneels and Jozef Van Bosstraeten in Sint-Pieters-Leeuw, Belgium. The brewery’s philosophy combines respect for tradition with a distinctly modern spirit. Their lambic and gueuze beers are brewed using traditional methods and ingredients, while their visual identity takes a more unconventional approach.

Instead of the classic striped labels traditionally associated with lambic, Lambiek Fabriek bottles feature a distinctive round label bearing a ram’s skull. Their branding is equally recognizable in the names of their beers, all of which end in “-Elle,” making the brewery’s bottles instantly identifiable.
