Flavor Profile
Every year at the onset of winter—marking the start of the sake brewing season—migratory swans return to Niigata, gathering on the waters of the lake beside the Koshitsukano Brewery. This breathtaking annual phenomenon, known in Japanese as hirai, symbolizes new beginnings and serves as the inspiration for this complex, engaging brew. From early winter through spring, more than 5,000 swans grace the brewery’s surrounding waters.
Hirai Junmai is centered around a rich, pronounced umami profile led by earthy mushroom and dry cocoa powder. Subdued fruit notes of quince, crisp pear, and melon balance the savory core, seamlessly giving way to an intriguing finish marked by a subtle tartness and vegetal earthiness reminiscent of shiitake and daikon radish. Beyond its intricate flavor profile, this remarkably complex sake also delivers unbeatable value.

PRODUCER INFORMATION
Producer: Koshitsukano
The brewery is located in Agano, Niigata Prefecture, in the heart of the Echigo Plain. The town is bordered by the Agano River to the south and west and the Gozu Mountains to the east. The region has long been known for its high-quality agricultural produce, including eggplant, yam, edamame, and the renowned Koshihikari rice.
While Koshihikari is primarily grown for table rice, Koshitsukano sources all of the Gohyaku Mangoku and Koshiibuki rice used for its sake from local growers. Fermentation relies on naturally occurring yeast that has been present in the brewery for generations, adding another layer of continuity between the brewery and its surroundings.
The combination of local rice, traditional brewing practices, and native yeast gives Koshitsukano’s sake a distinctive character, with each bottle offering an expressive taste of Niigata and its agricultural heritage.
