Flavor Profile

Since 1989, Kinmon Akita Brewery has stood out as one of the rare sake houses dedicated primarily to the art of mature, aged sake (koshu), frequently curating catalogs of vintage releases aged over decades. Their mastery received the ultimate global acclaim when their 1995 Yamabuki took home the prestigious Champion Sake trophy at the 2009 International Wine Challenge (IWC).

The 2004 Yamabuki reveals profound, layered aromatics that are best appreciated when served at room temperature. The bouquet leads with rich notes of melon intertwined with earthy mushrooms. On the palate, a lush, velvety mouthfeel carries beautifully rounded sweetness, perfectly tempered by gentle, balancing acidity.

PRODUCER INFORMATION

Producer: Kinmon Akita

The predecessor of Kinmon Akita Sake Brewery was founded in 1939 as Akita Fuji Brewery, adopting its current name in 1973. In its early years, the brewery focused primarily on producing sake for the local market. A new chapter began in 1989 with the arrival of its current president, Takashi Sasaki, who has played a central role in shaping the brewery’s distinctive style and product range.

Under Sasaki’s direction, Kinmon Akita has developed a particular focus on innovative, matured sake, especially Junmai Genshu. The range occasionally includes rare vintage releases, reflecting the brewery’s interest in exploring the possibilities of sake through extended aging.

Umami lies at the heart of Kinmon Akita’s style, balanced by a pronounced acidity that adds structure and depth to the sake. Their innovative approach has also earned international recognition, with the brewery receiving multiple gold medals at the International Wine Challenge (IWC) since 2009.
