Flavor Profile

Now in its sixth year, the collaborative Haregi project presents this exceptional release crafted in partnership with Kinmon Akita Brewery. While oak aging is exceedingly rare in the sake world, maturing sake in Southern French white wine casks is virtually unheard of on the market.

This distinctive Junmai elevates its exclusivity even further through the use of black koji (kuro-koji). Renowned for naturally producing bright acidity, this specialized mold lends Haregi Kitsune its vibrant, dynamic energy on the palate. At its core, the brew delivers the rich, savory umami hallmarks of the brewery, seamlessly layered with warm baking spices from the oak and an invigorating acidity for a truly extraordinary tasting experience.

PRODUCER INFORMATION

Producer: Kinmon Akita

The predecessor of Kinmon Akita Sake Brewery was founded in 1939 as Akita Fuji Brewery, adopting its current name in 1973. In its early years, the brewery focused primarily on producing sake for the local market. A new chapter began in 1989 with the arrival of its current president, Takashi Sasaki, who has played a central role in shaping the brewery’s distinctive style and product range.

Under Sasaki’s direction, Kinmon Akita has developed a particular focus on innovative, matured sake, especially Junmai Genshu. The range occasionally includes rare vintage releases, reflecting the brewery’s interest in exploring the possibilities of sake through extended aging.

Umami lies at the heart of Kinmon Akita’s style, balanced by a pronounced acidity that adds structure and depth to the sake. Their innovative approach has also earned international recognition, with the brewery receiving multiple gold medals at the International Wine Challenge (IWC) since 2009.
