Flavor Profile

Gravity’s inaugural wood-aged pálinka is a truly exceptional spirit, matured for 18 months in a bespoke, medium-toasted cask crafted with Hungarian Zemplén oak staves and ash wood heads. We chose this dual-wood construction because ash imparts minimal wood spice and tannins, allowing us to cultivate an elegant, beautifully restrained oak and tannin profile during aging.

The nose opens with a captivating harmony of fruit and gentle wood spice: rich peach jam notes from luscious Saturn peaches meld seamlessly with warm undertones of cinnamon, vanilla, and subtle clove from the cask. The palate remains decidedly fruit-driven, with bright stone fruit flavors elegantly framed by baking spices. It culminates in a long, lingering finish, leaving pure, crystal-clear peach preserves lingering on the senses.
