Flavor Profile

Founded in 1830, Fuji Takasago Brewery sits at the foothills of Mount Fuji, where the rice used for their sake is locally cultivated. The iconic peak also supplies the brewery’s lifeblood: centuries-old, naturally filtered, ultra-soft subterranean spring water (fukuryusui).

In terms of flavor, Kumo-no-Ue is easily one of our most distinctive offerings, leading with an unmistakable banana aroma. This signature profile is crafted using a specialized yeast strain unique to Shizuoka Prefecture, complemented by playful notes of melon and cotton candy. It is always an eye-opener at tastings, often eliciting the exact reaction: "I had no idea sake could taste like this!"

PRODUCER INFORMATION

Producer: Fuji Takasago

The story of Fuji Takasago began in 1830 in Shizuoka Prefecture, when the predecessor of the brewery operated as a liquor merchant. The brewery itself is located in Fujinomiya, near one of Japan’s most important Shinto shrines, Fujisan Hongu Sengen Taisha. At the time, the area was a prominent center of trade and commerce.

During the anti-Buddhist movement of the Meiji era, which began in 1868, the brewery’s second-generation owner secretly sheltered sacred Buddhist statues in the warehouse. They remain there to this day, where they continue to be regularly worshipped.

Fuji Takasago brews its sake using the exceptionally soft groundwater of Mount Fuji, which contributes to its delicate aromas and distinctive character. The brewery has also developed its own interpretation of the traditional Yamahai-Jikomi brewing method, which has become closely associated with its style and is known as “Takasago Yamahai.”

The brewery takes pride in working exclusively with ingredients from Shizuoka, including Homarefuji and Koshihikari rice, as well as locally produced yeast. Together with the region’s water and the brewery’s traditional methods, these ingredients allow Fuji Takasago’s sake to express a distinct sense of place and local craftsmanship.
