Flavor Profile

This beer is fermented exclusively with wild local yeasts and bacteria found on dandelions. The brewing process began over a year ago, when the Clef discovered while picking dandelion flowers that the bacteria in the dandelion create flavors of pineapple, candy, and tea leaves, and balance the acidity. The beer was fermented in wooden Bordeaux wine barrels, with the addition of Blue Franconian grapes, which gave it a soft red color.

PRODUCER INFORMATION

Producer: Clef Brewery

Clef brewery is located in Petrovče, Slovenia, about halfway between Maribor and Ljubljana, on the sunny, southeastern side of the Alps. The area is also the center of Slovenian hop growing, with a strong tradition; Clef founder Matevz Gobec built on centuries of knowledge from hop farmers and local winemakers to establish his brewery in 2019. Clef’s products span a wide range of styles, with a preference for locally grown hops. As the brewery’s name suggests, Matevz is a big music fan, so he delights audiences at many local music events with his special beers.
