Flavor Profile

21 Con Sangue Di Drago is a spontaneously fermented beer whose wort spends the night cooling in an open coolship. The following day, once chilled, it is transferred to barrique barrels, where fermentation and maturation take place.

After 24 months of barrel aging, fresh plums of the ancient Tuscan Sangue di Drago variety and wild Mirabolano plums were added and left to macerate for a further 6 months. This was followed by 18 months of bottle conditioning and maturation.

The beer has a beautiful, deep orange color reminiscent of wines subjected to extended maceration. Its acidity is intense, lactic, and remarkably fresh. On the palate, delicate layers of cherry, rhubarb, orange, and plum unfold over a restrained, tart, rustic base, creating a complex and highly expressive character.

PRODUCER INFORMATION

Producer: Cantina Errante

Cantina Errante is an experimental craft brewery based in Barberino Val d’Elsa, Tuscany, focused on spontaneous and mixed fermentation and a deep respect for local ingredients. Its name, meaning “Wandering Cellar,” perfectly captures the owners’ curious and exploratory approach to fermentation, particularly their work with wild yeasts, bacteria, and barrel aging.
Rather than pursuing large-scale production, Cantina Errante works in small batches, giving each beer the time and attention it needs to develop its own character. Local fruits and other ingredients play an important role, while the surrounding Tuscan landscape and its changing microclimate provide an ever-evolving source of inspiration.

The result is a collection of distinctive, expressive beers, each shaped by the ingredients, fermentation, and conditions of its particular vintage.
