Flavor Profile
Kumaya Brewery has a special affinity for Omachi, one of Japan’s oldest heirloom sake rices. It is notoriously difficult to cultivate: growing remarkably tall, the stalks are easily toppled by strong winds if not planted in sheltered terrain, rendering the crop unusable.
This Junmai Daiginjo is led by an alluring fruit-forward profile, showcasing notes of crisp pear, lush mango, and white peach. When paired with the signature depth and complexity of the Omachi grain, it delivers an unforgettable tasting experience. Its craftsmanship speaks for itself—this exceptional brew took home the prestigious Excellence Award at the Omachi Summit in both 2021 and 2022.

PRODUCER INFORMATION
Producer: Kumaya
Omachi is celebrated for giving sake remarkable complexity, depth, and individuality, but it is also one of the most challenging sake rice varieties to cultivate. The plants grow particularly tall, making them vulnerable to strong winds and requiring carefully selected, sheltered growing sites. Cultivating Omachi successfully demands considerable skill and attention, earning it comparisons to Pinot Noir among sake rice varieties.
Okayama accounts for around 90% of Japan’s Omachi production, a testament to the region’s particularly favorable conditions for growing the variety. Kumaya’s long-standing relationships with local growers allow the brewery to showcase the distinctive character of both Omachi rice and its Okayama terroir.
