Flavor Profile

The yamabuki flower can be found in almost the entire area of Akita prefecture, which also appears on the label of this deep, complex sake. The flower is also a symbol of elegance in Japan - it is no coincidence that this plant is displayed on the bottle of this 10 year aged Koshu.

Lovers of Scottish single malt whisky will surely find beauty in this exceptional sake, as its flavors are very reminiscent of medium peated malt whiskies. In its aroma the fruitiness can be found very faintly, mostly in the background, while the Sherry, umami and mineral flavors are highlighted at the center.

PRODUCER INFORMATION

Producer: Kinmon Akita

The predecessor of Kinmon Akita Sake Brewery was founded in 1939 as Akita Fuji Brewery, adopting its current name in 1973. In its early years, the brewery focused primarily on producing sake for the local market. A new chapter began in 1989 with the arrival of its current president, Takashi Sasaki, who has played a central role in shaping the brewery’s distinctive style and product range.

Under Sasaki’s direction, Kinmon Akita has developed a particular focus on innovative, matured sake, especially Junmai Genshu. The range occasionally includes rare vintage releases, reflecting the brewery’s interest in exploring the possibilities of sake through extended aging.

Umami lies at the heart of Kinmon Akita’s style, balanced by a pronounced acidity that adds structure and depth to the sake. Their innovative approach has also earned international recognition, with the brewery receiving multiple gold medals at the International Wine Challenge (IWC) since 2009.
