Flavor Profile

Koji is a true cornerstone of Japanese gastronomy, serving as the essential catalyst behind soy sauce, mirin, and sake. The name X3 Amairo comes from its unique recipe, crafted using three times the standard proportion of koji.

This amplified brewing method yields a dense, deeply savory umami core balanced by luscious notes of spiced apple compote and brown sugar, set against a firm yet silky acidity. Bottled as an undiluted genshu, it shows a remarkably complex, slightly oxidative character that will immediately intrigue fans of dry Sherry, Sauternes, or Vouvray.

PRODUCER INFORMATION

Producer: Kinmon Akita

The predecessor of Kinmon Akita Sake Brewery was founded in 1939 as Akita Fuji Brewery, adopting its current name in 1973. In its early years, the brewery focused primarily on producing sake for the local market. A new chapter began in 1989 with the arrival of its current president, Takashi Sasaki, who has played a central role in shaping the brewery’s distinctive style and product range.

Under Sasaki’s direction, Kinmon Akita has developed a particular focus on innovative, matured sake, especially Junmai Genshu. The range occasionally includes rare vintage releases, reflecting the brewery’s interest in exploring the possibilities of sake through extended aging.

Umami lies at the heart of Kinmon Akita’s style, balanced by a pronounced acidity that adds structure and depth to the sake. Their innovative approach has also earned international recognition, with the brewery receiving multiple gold medals at the International Wine Challenge (IWC) since 2009.
