Flavor Profile

Umeshu is a traditional Japanese liqueur made by macerating ume fruit, a botanical cousin of both plum and apricot. While umeshu is traditionally made by infusing ume in a neutral spirit, Kinmon Akita takes a distinctive approach, infusing Japan’s prized Nanko ume—renowned for its succulent flesh and intense fragrance—directly into four-year-aged koshu.

Founded in 1939, Kinmon Akita Brewery found its true calling in the late 1980s by specializing in the artisan craft of aged sake, or koshu. That expertise is at the heart of this expression, where the depth and complexity of aged sake provide an elegant counterpoint to the rich fruit character of Nanko ume.

The nose leads with alluring aromas of Amarena cherry and marzipan, carrying through seamlessly onto the palate alongside rich stone-fruit notes. Balanced by elegant, vibrant acidity, it feels remarkably light and refined when enjoyed neat, yet possesses the aromatic depth to elevate premium craft cocktails.

PRODUCER INFORMATION

Producer: Kinmon Akita

The predecessor of Kinmon Akita Sake Brewery was founded in 1939 as Akita Fuji Brewery, adopting its current name in 1973. In its early years, the brewery focused primarily on producing sake for the local market. A new chapter began in 1989 with the arrival of its current president, Takashi Sasaki, who has played a central role in shaping the brewery’s distinctive style and product range.

Under Sasaki’s direction, Kinmon Akita has developed a particular focus on innovative, matured sake, especially Junmai Genshu. The range occasionally includes rare vintage releases, reflecting the brewery’s interest in exploring the possibilities of sake through extended aging.

Umami lies at the heart of Kinmon Akita’s style, balanced by a pronounced acidity that adds structure and depth to the sake. Their innovative approach has also earned international recognition, with the brewery receiving multiple gold medals at the International Wine Challenge (IWC) since 2009.
