Flavor Profile

21 Con Sangiovese is a spontaneously fermented beer whose wort spends the night cooling in an open coolship. The following day, once chilled, it is transferred to barrique barrels, where both fermentation and maturation take place.

After 24 months of barrel aging, exceptionally fresh biodynamic Sangiovese grapes were added for maceration. The grapes come from 40-year-old vines growing on the hills directly behind the brewery and account for 15% of the total wort. They were hand-harvested into small crates, foot-crushed, and hand-destemmed. Once added to the beer, they triggered a further fermentation, bringing with them an abundance of sugars and microorganisms.

The result is a deep orange beer with an expressive range of fruity and tart flavors. Notes of blood orange, redcurrant, and grape mingle with bitter nuances, while rustic, distinctive tones of smoke and clove add depth and character.

PRODUCER INFORMATION

Producer: Cantina Errante

Cantina Errante is an experimental craft brewery based in Barberino Val d’Elsa, Tuscany, focused on spontaneous and mixed fermentation and a deep respect for local ingredients. Its name, meaning “Wandering Cellar,” perfectly captures the owners’ curious and exploratory approach to fermentation, particularly their work with wild yeasts, bacteria, and barrel aging.
Rather than pursuing large-scale production, Cantina Errante works in small batches, giving each beer the time and attention it needs to develop its own character. Local fruits and other ingredients play an important role, while the surrounding Tuscan landscape and its changing microclimate provide an ever-evolving source of inspiration.

The result is a collection of distinctive, expressive beers, each shaped by the ingredients, fermentation, and conditions of its particular vintage.
