Flavor Profile

2025 Vintage

Eclipse is an imperial that focuses on a lighter element: smoke.

Cherry- and oak-smoked grains form a delicate balance between bright red fruit and dry tannin, while Lapsang Souchong from the mountain tea plantations of Fujian lends soft pine forest aromas to the nose.

These delicate wisps settle onto a stout base that exercises restraint above all: a refined balance of black malt, toasted grains, and dark caramel, smoothed out by silky oats and a touch of lactose. The finish offers a subtle linger of cocoa powder, and warms the throat to embrace the next sip.

PRODUCER INFORMATION

Producer: Gravity Brewing

Gravity is a different sort of brewery from most. We set out with the conviction that excellent beer is made by brewers, not investors. Experimentation, obsession, and the willingness to dump a bad batch down the drain – these are what allow us to produce innovative beers with real character, and we strive to improve them at every turn.

Gravity.shop is the permanent home of the beers we make in the smallest quantities and give the most time to: an evolving selection of imperial stouts, barleywines, sours, and other beers above 10% ABV. Each vintage is matured for months, often with wood, before being bottle-conditioned and released in limited quantities. Presented in 375 mL and 750 mL wax-sealed bottles, these are beers to be enjoyed slowly, shared with friends, or laid down to evolve further.

These are the only Gravity beers consistently available beyond our taproom. We rarely distribute and only occasionally take our beers abroad, making the webshop the one constant source for our small-production releases. Every batch is another opportunity to refine the beer and the process, with the expectation that the next one should always be better than the last.
