This collab with our friends at Dublin's own Rascals Brewing Co. has been a year in the making, and is rooted in a shared love of bold ideas and rich, character-driven beer.
Rascals found us a very special Irish whiskey cask which had also been used to hold beer for a Dublin brewery, and brought the oak staves all the way to Budapest. After cleaning and trimming, we re-toasted the stave chunks, soaked them again in fresh Irish whiskey, and ran them through a long, gentle maturation on our proprietary wood infusion system to pull every last note from the oak.
To round out the toffee tones and barrel sweetness, we added a touch of Irish sea salt — not just for balance, but to bring out this imp's deep, nutty character.
On the nose, you'll find layers of hazelnut, almond, vanilla, and tonka bean, followed by smooth caramel and cinnamon fudge notes. As the glass warms, a subtly saline, earthy undertone adds even more depth.
The palate is defined by salted caramel and dark chocolate, with roasted hazelnut lingering in the finish. There’s also a touch of coffee and cocoa powder bitterness that rounds it out beautifully. A medium body and mellow acidity bring balance to the high ABV and bold flavors, resulting in a well-structured, energetic sip.

Gravity.shop is the permanent home of the beers we make in the smallest quantities and give the most time to: an evolving selection of imperial stouts, barleywines, sours, and other beers above 10% ABV. Each vintage is matured for months, often with wood, before being bottle-conditioned and released in limited quantities. Presented in 375 mL and 750 mL wax-sealed bottles, these are beers to be enjoyed slowly, shared with friends, or laid down to evolve further.
These are the only Gravity beers consistently available beyond our taproom. We rarely distribute and only occasionally take our beers abroad, making the webshop the one constant source for our small-production releases. Every batch is another opportunity to refine the beer and the process, with the expectation that the next one should always be better than the last.

More than a decade later, Rascals has grown into an internationally recognized, World Beer Award-winning brewery, while retaining its small-scale, independent character. The brewery is also credited with opening Ireland’s first official taproom. Today, the space accommodates 120 guests and offers 12 beers on tap, alongside a menu featuring some of the city’s most highly regarded pizzas.
From its beginnings, Rascals has combined the creativity of small-scale brewing with an adventurous approach to beer, building a strong following both in Ireland and internationally.
