Flavor Profile

Nonsangio 2021 is the result of a collaboration with Tenuta La Novella, a biodynamic winery in Chianti Classico. This is the second vintage, following 2020, but there are some important differences in the process and the results.

The challenge which Errante’s brewers Simone and Lorenzo set for themselves, was to bring out the Sangiovese grape, the sovereign grape of the region, with all the freshness a high-altitude vineyard can offer. They decided to take a risk, opting for spontaneous co-fermentation, without the use of yeasts, Brétt, or added bacteria, but instead exploiting the rich microflora native to the biodynamic grapes, aided by a few crates of wild grapes we found around the estate, to ferment a must brewed on the same day as the harvest. Virtually no contact with the skins occurred, which imparted little or no color to the must. And this is the main difference compared to the 2020 vintage.

Fermentation lasted approximately two months in stainless steel and four in barrique, followed by 12 months of secondary fermentation and maturation in the bottle. The beer is decidedly fresh and delicate, with fruit at the fore (wild strawberry, raspberry, and melon) and a very balanced acidity. Compared to the 2020, the wild notes are more elegant and the drinkability is more rounded. Spontaneous co-fermentation has given us a beverage that not only combines the distinctive traits of both beer and wine, but is also perhaps something different, a "third" thing. Nonsangio lies in true hybrid territory, without any reference points, waiting to be discovered.

PRODUCER INFORMATION

Producer: Cantina Errante

Cantina Errante is an experimental craft brewery based in Barberino Val d’Elsa, Tuscany, focused on spontaneous and mixed fermentation and a deep respect for local ingredients. Its name, meaning “Wandering Cellar,” perfectly captures the owners’ curious and exploratory approach to fermentation, particularly their work with wild yeasts, bacteria, and barrel aging.
Rather than pursuing large-scale production, Cantina Errante works in small batches, giving each beer the time and attention it needs to develop its own character. Local fruits and other ingredients play an important role, while the surrounding Tuscan landscape and its changing microclimate provide an ever-evolving source of inspiration.

The result is a collection of distinctive, expressive beers, each shaped by the ingredients, fermentation, and conditions of its particular vintage.
