Flavor Profile

This Ratafia Champenois from Louis de Sacy is made from Pinot Noir must exclusively grown in Verzy’s Grand Cru vineyards. A neutral grape spirit is added to ensure the alcohol content and halt fermentation, allowing the terroir to shine. The wine is aged for 42 months in 228-liter barrels and bottled unfiltered and unfined. The 2018 vintage was produced in a limited run of 760 bottles.

On the nose and palate, it offers a fascinating blend of cocoa, roasted coffee, hazelnuts, caramel, candied orange peel, figs, and dates. Best enjoyed at 12–16°C.

PRODUCER INFORMATION

Producer: Champagne Louis de Sacy

The Sacy family runs an organic, 18-hectare grower Champagne estate based in Verzy, where they also cultivate Grand Cru vineyards. The family’s connection to the Champagne region dates back to 1633, while their winemaking history began in the 1960s.

Their vineyards around Reims are planted with the region’s classic grape varieties: 65% Pinot Noir, 30% Chardonnay, and 5% Pinot Meunier. Sustainable and environmentally conscious farming is at the heart of their approach, while in the cellar they place equal emphasis on technical precision, openness, and patience.

This combination of deep roots in the region, careful organic farming, and a thoughtful approach to winemaking allows the Sacy family to create Champagnes that reflect both their heritage and the character of their vineyards.
