Flavor Profile

Nontrebbio Cuvée 21/24 is a blend of spontaneously fermented beers made with three white grape varieties widely found in Tuscany.

Errante kept things simple: first, they co-fermented the 2021 Trebbiano and Malvasia grapes and aged them in barriques for three years.

In 2024, they then macerated the skins of Trebbiano and Vernaccia in a blend of spontaneously fermented beers, both from coolships and perpetuals.

Finally, the brewers assembled everything, leaving the bottles in the cellar for another year.

Nontrebbio Cuvée 21/24 is much easier to drink than to explain: fresh and incredibly drinkable, yet intense, deep, and multifaceted.

PRODUCER INFORMATION

Producer: Cantina Errante

Cantina Errante is an experimental craft brewery based in Barberino Val d’Elsa, Tuscany, focused on spontaneous and mixed fermentation and a deep respect for local ingredients. Its name, meaning “Wandering Cellar,” perfectly captures the owners’ curious and exploratory approach to fermentation, particularly their work with wild yeasts, bacteria, and barrel aging.
Rather than pursuing large-scale production, Cantina Errante works in small batches, giving each beer the time and attention it needs to develop its own character. Local fruits and other ingredients play an important role, while the surrounding Tuscan landscape and its changing microclimate provide an ever-evolving source of inspiration.

The result is a collection of distinctive, expressive beers, each shaped by the ingredients, fermentation, and conditions of its particular vintage.
